2 tbsp Maple Syrup
Bacon Rub
3/4 cup Dark Brown Sugar
1 tbsp Course Ground Coffee
1 tsp Ground Cinnamon
1/2 tsp Ground Ginger
1/2 tsp Allspice
1/4 tsp Cayenne
1/2 tsp Smoked Paprika

STEP 2: Mix all dry ingredients together in a mixing bowl.
STEP 3: Layout bacon and lightly drizzle both sides of the bacon with maple syrup.
STEP 4: Coat each slice of bacon generously with the dry rub mixture and shake out any excess rub.
STEP 5: Place the bacon on a wire rack that is on top of a baking tray and make sure that none of the bacon is overlapping.
STEP 6: Bake on the center oven rack at 350 degrees for 12-14 minutes, then flip bacon over and bake for another 10-12 minutes.
STEP 7: When bacon is done, carefully remove bacon from pan and place on parchment paper to cool.
